This Little Piggie...

This was the first time using an old clay pot cooker my other half found for me at an estate sale. I AM SOLD! I don't know why there isn't one in every home. Mine has the glaze in the bottom and clean up was incredibly easy. I was directed to wrap my meat in parchment paper and soak my pot in water. You don't add any actual liquid  and everything cooks at 250F. Pictured here awaiting the final wrap and about to go into the oven are some pork loin chops that I seasoned, laid over each other in the parchment, surrounded with apricots, and finally drizzled with unsweetened home made apple sauce. The resulting product was mouth watering and it cooked faster than in a regular roasting pan even at the low temp. It smelled so wonderful and the table was set, sides done, everyone waiting.... I forgot to get the after photo.
